steve's bad ass broccoli salad

So I got this new magical broccoli salad you gotta try!

First its got carrots. Yuck.
Second its got broccoli. Double yuck.
Next its got purple onion. What, are you kidding me?

Sounds pretty nasty so far eh? Well wait cuz I gotta way to mix these up with some secret ingredients that’ll make your mouth water!

What you add to this bowl are raisins, bacon bits and low fat mayo…

Together this mix is insane! so basically you do it like this:
1 oz carrots
1 oz broccoli
1/8 oz purple onion
1/4 oz bacon bits
1/4 oz raisins
Tbsp low-fat mayo

So I wash the and peel the carrots and broccoli, then use this chopper device I bought at the store that mashes it up pretty fine.  Definately chop up the onion into real small pieces.  Then add the bacon bits (get the gourmet kind, not the cheap fake hard stuff), then the raisins (remember to keep the raisins in the fridge, they get rock hard if left out too long), then add the mayo.

You can add more or less of any ingredient depending on your tastes.  This ratio works pretty well for me.  Also its good to soak the carrots sometimes to make them a little softer, easier to chop up and also chew on.

I got the idea for this salad from my local gym (LVAC).   I ordered a turkey wrap one day and they offered the salad in substitute for chips.  I didn’t think anything of it til I had a bite.  Damn!  I knew then and there that I had to learn how to make this.  They wouldn’t tell me how they made it (big secret I guess) so I basically took it home and dissected it until I figured out the ingredients.  Then a couple times of trial and error and I had my own version of it!

Look for me to star in “Iron Chef” in 2010 ;)

    WHat?! Carrots YUM! Broccoli DOUBLE YUM! Especially Steamed, purple onion – uh – well – not so much… ;p Mint anyone? ;)

    this is the best salad EVER ! :) I have a few additions for it that I think would be really yummY…. add: Goat cheese or feta and chopped garbanzo beans !
